When I think of comfort food it definitely involves a creamy texture. This one just uses a little bit of vegan cream cheese per serving which makes it a lot less naughty.

You can, as always, substitute veggies in this dish depending on your individual tastes.

I used Lotus Foods Jade Rice Noodles* to keep it gluten free. But feel free to use any type of preferred rice/noodle/grain.

Creamy Vegetables

Ingredients

  • 1 1/2 Tbl. olive oil
  • 1 medium onion chopped
  • 1 medium Green Bell Pepper, chopped
  • 1 Tbl. garlic minced
  • 12 oz. mushrooms sliced
  • 10 oz. Small Tomatoes, Cherry, Grape or Marzano
  • 1 tsp. salt
  • 1 tsp. Herbes de Provence
  • 1 tsp. garlic powder
  • 4 oz. vegan sour cream

Directions

  1. In a large saute pan heat oil and saute onion and green pepper for 3 minutes.
  2. Add crushed garlic, mushrooms, tomatoes and seasonings and continue cooking for 7 minutes, stirring often.
  3. Stir in Vegan Cream Cheese and saute for 2 minutes.

Simply Spinach

Ingredients

  • 16 oz. Spinach, frozen/chopped

Directions

  1. Cook, drain and squeeze out excess water of frozen spinach. NOTE: You can use fresh spinach leaves if you prefer.

Jade Rice Noodles

Ingredients

  • 10 oz. Jade Pearl Rice Noodles, prepared

Directions

  1. Prepare Jade Rice Noodles, or other grain, according to package directions.
  2. Place prepared noodles on plate, top with spinach and then creamy veggies. Top with fresh ground pepper, if desired.
