I have made many, many batches of Cream of Broccoli Soup through the years but always used regular broccoli.

I had a some broccoli rabe in my refrigerator and decided to experiment with it. Since broccoli rabe has a less bitter and milder taste than regular broccoli, it was worth a bit of experimentation.

WOW. The soup was so unbelievably creamy and mild. I suggest you give this recipe a try soon.

For dinner you can serve alongside salad for a complete meal. Trust me, this soup is hardy so you don’t need any bread.

Ingredients

  • 4 Tbl Earth Balance Margarine
  • 1 medium onion Chopped
  • 2 large russet potatoes Chopped
  • 20 oz. broccoli rabe tops and upper stems only, roughly chopped
  • 4 cups hot water
  • 2 Tbl Low Sodium Better Than Bullion Vegetable Flavor
  • 2 Tbl. flour
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Directions

  1. In a medium saucepan, melt Earth Balance.
  2. Add Chopped Onion and cook, over medium heat for 5 minutes or until translucent.
  3. Add Chopped Potatoes and cook 5 minutes.
  4. Add Broccoli Rabe and cook 2 minutes.
  5. In a separate bowl, mix Better Than Bullion with the hot water until dissolved.
  6. Whisk in flour.
  7. Pour into saucepan over onion/potato mixture and cook, covered for 30 to 35 minutes or until broccoli rabe and potatoes are fork-tender.
  8. Season with salt and pepper.
