I used to be a cow’s milk cheese addict. Thankfully for me, the planet and, most importantly, the cows, I broke free of that lifestyle.

I have experimented with making nut cheeses and sauces and think that this creamy-delicious variety is the best.

Please feel free to experiment…if you like spicy, add some heat and if you prefer it with a South of the Border flair, try adding 1/8 cup of chopped cilantro. The possibilities are literally endless.



  • 2 cups raw cashews unsalted
  • 1 1/4 cup water
  • 1 tsp. Reduced Sodium Vegetable Better Than Bouillon
  • 1/2 tsp. salt
  • 2 Tbl. nutritional yeast
  • 1 tsp. garlic Crushed


  1. Place cashews in a medium bowl. Mix Reduced Sodium Vegetable Bouillon with water and pour over cashews. Let sit for 2 hours.
  2. Pour soaked cashews, along with other ingredients, into a food processor and mix until smooth. If it seems too thick for your preference, try adding a little more water; 2 TBL. at a time, until desired consistency is reached.
