Basmati Rice


  • 3/4 cup basmati rice
  • 3/4 cup quinoa
  • 3 cups water


  1. Combine basmati and quinoa with water in a medium pot.
  2. Bring to a boil, cover, and let simmer 20 min.
  3. Remove from heat and cool.

Quinoa Salad


  • 1/2 cucumber chopped
  • 1/2 red onion chopped
  • 2 tomatoes chopped
  • 1/2 green pepper chopped
  • 2 tablespoons fresh cilantro chopped
  • 1 can black beans
  • 2 tablespoons olive oil
  • 4 tablespoons champagne vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


  1. Prepare all ingredients and combine in a mixing bowl.
  2. Stir rice into to mixing bowl until combined. Serve hot or cold.
