I came across a posting from Mercy For Animals for a Vegan Tuna Melt Sandwich. I wanted to give it a try but add some of the ingredients I love! Also, by substituting tomatoes for the bread it made it healthier and gluten-free.

This makes enough for 8 lunch-sized portions and 4 large dinner portions. It keeps in the refrigerator for a few days and is absolutely delicious. Next time I might add a little seaweed to the mix!

I like to try and invent a variety of veggie burgers and these seriously are amazing. Most veggie burgers have cooked peas and corn, which are two of my least favorite veggies. I prefer broccoli and sweet potato so that’s what I put in this recipe.

You can always bake them in the oven but I prefer the crispy texture that comes from pan-frying or grilling. If you want to bake, I would recommend coating the burgers in cornmeal first.

I used Cajun Seasoning for a little bit of heat but you can substitute hot sauce or eliminate it altogether. These burgers are gluten-free but if you want them to hold together better, add 1/2 cup of bread crumbs.

Burgers can be made ahead and frozen.

It is raining again in Southern California. This has been one of the wettest winters on record but no one is complaining! We need the moisture, albeit maybe not this much, to help with the years-long drought.

I ran to the Whole Foods before the torrential downpours started and gathered up some ingredients for some Chili.

This recipe only takes about 10 minutes to prepare and 90 minutes to cook.

Serve it with a handful of tortilla chips or even some oven-baked polenta.
