When I was growing up there was one “fancy” restaurant in my small upstate NY town, The Knotty Pine. One of my mom’s favorite dishes from there was “Chicken Marsala”.
Every time I would go back home to visit I would plea with the restaurant’s owner to share the recipe. Well, after asking at least 500 billion times, she finally agreed.
I have always wanted to try and make it “chickenless” and did so last night. The end result was positively scrumptious. It is quite a tedious process but well worth it!

Lemon is so fresh, just thinking of it makes me smile! Lemons are generally best throughout the summer but here in Southern California, we can enjoy them year-round.
I went a little lemon-crazy over the weekend and made these cookies, soap and body scrub!
This recipe makes about 3 dozen generous sized cookies.

My husband loves artichokes but when I told him my idea for this recipe he seemed less-than-excited. That is, however, until he tasted it.
I served the pasta on top of pan-grilled romaine leaves but any green would work. It is also good hot or cold and makes a great main or side dish.
Make sure that you use artichoke hearts in water, not oil.
