I lived in Kansas City for a time in my life and loved the taste of BBQ-sauce. I didn’t eat meat but found the spicy-sweet goodness was a perfect complement to french fries or baked potatoes!

Recently I saw Upton’s Naturals Bar-B-Que Jackfruit and decided to try to use it as a filling for enchiladas. They came out really great but may be a bit spicy for some people so try adding a little extra vegan sour cream.

ENJOY!

Shredded Jackfruit Filling

Ingredients

  • 2 Tbl. olive oil
  • 10.6 oz. Upton's Naturals Bar-B-Que Jackfruit shredded
  • 1/2 medium red onion finely chopped
  • 1/2 tsp. salt
  • 2 medium tomatoes chopped

Directions

  1. In a large saute pan, heat oil.
  2. Add red onions to pan and saute 3 minutes over medium-high heat
  3. Shred or chop into fine pieces, jackfruit and add to pan. Cook for an additional 2 minutes.
  4. Stir in Salt and Diced tomatoes and continue cooking for 2 minutes.

Corn Tortillas, Enchilada and Nut Cheese Delights

Ingredients

  • 12 small corn tortillas,
  • 15.5 oz. Red Enchilada Sauce
  • 3/4 cup Parmela Creamery Aged Cheddar

Directions

  1. Grease a 9x13" glass pan with organic olive oil spray
  2. Arrange 6 tortillas on bottom layer of pan.
  3. Scoop jackfruit filling onto tortillas and cover with additional tortillas.
  4. Pour entire bottle of Red Enchilada sauce onto tortillas and then top with cheese.
  5. Cover with aluminum foil at 375 degrees for 35 minutes.
  6. Remove aluminum foil and broil for 5 minutes or until cheese is melted.
  7. Remove from oven and let sit, covered for about 5 minutes.
  8. Cut into 8 even pieces and place on dish.

Delectable Toppings

Ingredients

  • 8 tbl. vegan sour cream
  • 2 large avocados

Directions

  1. Top each square with 1 Tbl. Vegan Sour Cream and 1/2 chopped avocado.
