I am not a huge fan of dessert but these offer just the right amount of sweetness! They are fairly easy to make and because you put the entire batter into one baking sheet, cleanup is easy.

It took me quite a long time to find some good vegan butterscotch chips and I purchased mine here. They also have vegan white chocolate chips! AMAZING!

You can make these into cookies but the bars are so-much-easier! Also perfect during the hot summer months when you want to limit oven time.

Ingredients

  • 2 sticks Earth Balance softened
  • 1 1/4 cups sugar
  • 3/4 cup brown sugar
  • 1/2 cup applesauce
  • 2 tsp. baking powder
  • 1 tsp. vanilla
  • 2 3/4 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 cups oats
  • 1 1/2 cups Vegan Butterscotch Chips

Directions

  1. Before getting started: MAKE APPLESAUCE EGGS by mixing together 1/2 cup of Applesauce and 2 tsp. Baking Powder. Stir and Let sit for 2 minutes before adding to cookie batter mix, below.
  2. Mix together Earth Balance and Sugars until Light and Fluffy, about 2 minutes.
  3. Add Applesauce Eggs and vanilla and mix an additional 2 minutes.
  4. Stir together dry ingredients and add to Earth Balance mixture.
  5. Add Butterscotch Chips and stir until evenly blended.
  6. Prepare a large cookie sheet with baking spray and press mixture, using wet hands, into one even layer.
  7. Bake in 350 degree oven or until golden brown.
  8. Remove from oven, let cool in pan and slice into bars.
