Fall is just around the corner and if you have been visiting your local craft store, Christmas is everywhere!

To properly enjoy the fall, pick up a few cans of organic pumpkin and try out this recipe.

The cookies keep for about 5 days when stored in an air-tight container. I like to add a piece of bread to the container to keep them moist.

Ingredients

  • 1 teaspoon baking powder
  • 1/2 cup applesauce
  • 2 sticks Earth Balance Margarine
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1 cup pumpkin pureed
  • 1 teaspoon vanilla extract
  • 3 cups flour
  • 1 cup granola
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions

  1. In a small bowl mix 1 tsp. Baking Powder and 1/2 cup Organic Applesauce. Set aside.
  2. In a medium bowl cream 2 Sticks of Earth Balance, 3/4 cup brown sugar, 3/4 cup white sugar.
  3. Add applesauce mixture, 1 cup pumpkin, and 1 tsp. vanilla extract, to the medium bowl and mix well.
  4. In a large bowl mix together 3 cups flour, 1 cup granola, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger, 1 tsp baking soda and 1 tsp salt.
  5. Combine dry and wet ingredients in the large bowl and mix until blended.
  6. Drop by heaping teaspoons onto greased baking sheets.
  7. Bake 10 to 12 minutes until sides are slightly browned.
  8. Let cool 2 minutes on cookie sheet and transfer to wire cooling rack.
