I am not quite sure when someone had the idea to rice cauliflower but all I can say is “thank you”!

Cauliflower is absolutely amazing is a weekly staple for vegan and gluten-free kitchens alike.

This dish is satisfying enough to be a complete dinner but also works great as a side dish. Serve hot or cold!

Ingredients

  • 2 Tbl. olive oil
  • 4 medium shallots finely chopped
  • 1 large red bell pepper finely chopped
  • 1 small jalapeno seeds removed, sliced into discs
  • 1 large cauliflower riced
  • 4 Tbl. fresh cilantro chopped
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 can chick peas drained, reserving liquid for another use
  • 1 cup Parmela Creamery Aged Nut Cheese pepper jack flavor
  • 2 medium tomatoes chopped
  • 2 Tbl. Earth Balance Margarine
  • 2 medium avocados chopped
  • 4 cups fresh spinach

Directions

  1. In a large saute pan, heat oil and add shallots, red pepper and jalapeno. Cook 4 to 5 minutes over medium-high heat.
  2. Stir in cauliflower, cilantro, salt, garlic powder and chick peas, stirring continually, for an additional 4 to 5 minutes.
  3. Stir in tomatoes and Parmela Creamery Nut Cheese. Cook for 2 minutes.
  4. Add Earth Balance and stir until melted.
  5. Divide into equal servings, place on top of 1/2 cup fresh spinach leaves and top each with 1/2 chopped avocado.
