I saw a recipe this weekend and decided to give it a try but wanted to substitute my own ingredients in place of what the original recipe recommended. I am not a fan of super-sweet foods and these bars deliver just the right amount of sugar to make them yummy but not overpowering.

The next time I make these I think I will experiment with drizzling some melted dark vegan chocolate on top!



  • 1 1/4 cups Earth Balance Margarine Equalivant of 2 1/2 sticks, softened
  • 1 cup sugar
  • 1 tsp. almond extract
  • 1 tsp. vanilla extract
  • 2 cups almond meal
  • 3/4 tsp. salt
  • 1 1/2 tsp. baking powder
  • 2 1/2 cups flour
  • 1 cup raspberry jam
  • 1 cup almonds raw, sliced


  1. With a mixer blend softened Earth Balance, Sugar and extracts for 2 minutes, or until fluffy.
  2. In a small bowl, mix together Almond Meal, Salt and Baking Powder and then add to Earth Balance mixture, blending well.
  3. Add in flour, one cup at a time.
  4. Grease a 9 x 13 pan and press 3/4 of mixture into pan until even and touching all sides.
  5. Spoon Raspberry Jam on top of crust mixture in pan to create 2nd layer.
  6. Add 1 cup of sliced almonds to remaining crust mixture and then sprinkle on top of Raspberry Jam layer.
  7. Bake 350 degrees for 40 to 45 minutes or until golden brown on top.
  8. Slice into bars and serve warm or cold. Keep leftovers in airtight container.
