I love tomatoes. Especially during the late summer months when they taste absolutely amazing. Be careful not to overcook this dish. I suggest even cooking the pasta to an al dente texture. This dish is great hot or cold and can be served as a main dish or hardy side dish.

Orzo Pasta

Ingredients

  • 1 lb Orzo cooked

Directions

  1. Cook orzo pasta, according to package directions and reserve 1/3 cup

Delicious Veggie Base

Ingredients

  • 1 bunch broccoli florets broken into bite-sized pieces
  • 1/3 cup hot water
  • 1 Tbl. Low Sodium Better Than Bullion Vegetable Flavor Mixed into hot water
  • 2 Tbl. olive oil extra virgin
  • 3 medium tomatoes chopped
  • 1 Tbl. dried oregano
  • 1 tsp salt
  • 1/3 cup black olives chopped, or olive tapanade

Directions

  1. In a large bowl, place broccoli and water mixed with Better Than Bullion Vegetable Bullion. Cover with plastic wrap and heat 10 to 12 minutes in microwave.
  2. Cover with plastic wrap and heat 10 to 12 minutes in microwave.
  3. Remove from microwave and let sit, covered, for 5 to 10 minutes.
  4. In the meantime, heat olive oil in large saute pan.
  5. Add tomatoes, dried oregano & salt.
  6. Cook for 1 to 2 minutes, just long enough to heat and not break down the tomatoes.
  7. Stir in 1/3 cup of reserved pasta water.
  8. Add broccoli, olives and pasta.

The Finishing Touch

Ingredients

  • 1 Tbl. GoVeggie Vegan Parmesean

Directions

  1. Top with Go Veggie Parmesan Style Topping and, if desired, Crushed Red Pepper or Black Pepper.

  1. I had this dish freshly prepared and served warm for dinner, then the next day had it served cold for lunch. I can say it was every bit as good cold as it was warm. This seems to be advantageous given that it could be prepared ahead of time and served cold as a side dish.
