There are those days when a warm dish of something slightly decedent is just what is needed. Today was one of those days. I logged in 12 miles yesterday so thought I deserved a little “treat”.

This comes together super easy and is great topped with or alongside leafy greens or any other colorful vegetable.

It is very satisfying so try starting with a half of portion.

Creamy and Cheesy Sauce

Ingredients

  • 8 oz. Earth Balance
  • 4 Tbl. flour (for gluten-free use rice flour)
  • 2 Tbl. nutritional yeast
  • 1/2 tsp. salt
  • 1/2 tsp. black or white pepper
  • 1/8 tsp. nutmeg
  • 4 cups Ripple Non Dairy Milk or unsweetened non-dairy milk of choice
  • 7 oz. Parmela Creamery Sharp Cheddar Style Cheese shreds

Directions

  1. In a medium saucepan, melt Earth Balance. Whisk in Flour and Nutritional Yeast and cook over medium heat for 3 to 4 minutes, making sure mixture does not stick to bottom of pan.
  2. Stir in salt, pepper and nutmeg and whisk slightly.
  3. Add Ripple (or other non-dairy milk) and continue whisking. Cook, over medium heat for 5 minutes.
  4. Stir in Parmela Creamery shreds and continue cooking, whisking occasionally, for 5 minutes.

Perfect Pasta

Ingredients

  • 1 lb. pasta cooked according to package directions

Directions

  1. Boil a large pan of water, add salt (after the water starts boiling) to taste. Cook an additional minute beyond suggested boiling time.
  2. Drain, return to pan and mix in Creamy and Cheesy Sauce.
