My mom used to make this recipe and I remember smelling the amazing aromas that penetrated the house. It is a quick and easy dinner that is unbelievably satisfying.

You really don’t need anything else alongside, but if you insist, some fresh bread or sliced tomatoes are good choices.

I used arugula (rocket) lettuce but any green of choice would suit…kale, escarole or collard.

Ingredients

  • 2 Tbl olive oil
  • 1/2 large green pepper diced
  • 1 large shallot diced
  • 5 cloves garlic diced
  • 2 cans cannellini beans with juice
  • 6 leaves basil
  • 1/8 tsp. red pepper
  • 1/8 tsp. black pepper
  • 1 tsp. Oregano
  • 2 Tbl. white wine, optional
  • 5 oz. arugula or greens of choice
  • 1 tsp. Reduced Sodium Better Than Bullion
  • 1/2 cup water from boiling pasta

Directions

  1. In a large saute pan, heat oil and add green pepper, shallot and garlic, cooking over medium heat for 5 minutes. Be sure to stir often to avoid garlic burning.
  2. Stir in beans and juice, salt basil, red pepper, black pepper, oregano and wine, if desired, and continue to simmer for 15 minutes.
  3. Stir in arugula and wilt.

Simply Pasta

Ingredients

  • 1/2 lb. pasta cooked to package directions

Directions

  1. Cook pasta according to package directions.
  2. Drain and add to pan with beans & greens.
  3. Serve in bowls and top, if desired, with Vegan Parmesan.
