Not quite sure where this idea came from today but it is certainly a keeper. I like the melding of flavors and textures.
You can serve on fresh greens, as pictured, or alone as a side dish. I also topped mine with pine nuts but for those with nut allergies, they are definitely optional.

I am not a huge fan of dessert but these offer just the right amount of sweetness! They are fairly easy to make and because you put the entire batter into one baking sheet, cleanup is easy.
It took me quite a long time to find some good vegan butterscotch chips and I purchased mine here. They also have vegan white chocolate chips! AMAZING!
You can make these into cookies but the bars are so-much-easier! Also perfect during the hot summer months when you want to limit oven time.

I have mentioned before that I used to not like the taste of Brussels Sprouts. I have spent many hours creating tasty creations with them and am now a BS-convert!
Did you know these sweet little cabbage-wanna-bes boast 124% of the RDA of Vitamin C. Plus a serving only contains 38 calories and 0.3 grams of fat!
The key, in my opinion, is to make them the a star ingredient in several of my creations because, after all, we all need some extra C!
You can serve this with any type of grain and can also substitute the red/yellow pepper with green.
