OK, here is the rundown…asparagus by itself can be a little bitter but when you add toss it with some mushrooms, riced broccoli and some seasonings even the haters will be convinced of this miracle vegetable’s goodness.

This dinner is ready in as little as 45 minutes.

Ready. Set. GO!


Oven Crunchy Asparagus


  • 1 Tbl. olive oil
  • 1/2 tsp. salt
  • 8 oz. fresh asparagus cooked whole then chopped
  • 1 Tbl. low sodium tamari
  • 1 tsp. garlic powder
  • 1 tsp. onion powder


  1. Line a baking sheet with foil and preheat oven to 350 degrees.
  2. Line up asparagus, trimmed and discarded edges on foil.
  3. Season with Olive Oil, Tamari, Salt, Pepper, Garlic and Onion Powders.
  4. Bake for 20 to 25 minutes, depending on thickness of asparagus.

Creamy Veggie Topping


  • 2 Tbl. olive oil
  • 8 oz. cremini mushrooms sliced
  • 15 oz. broccoli riced
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 8 oz. GoVeggie Chive & Garlic Cream Cheese Alternative


  1. In a large saute pan heat 1 Tbl. oil and add mushrooms cooking until slightly browned.
  2. Stir in riced broccoli, salt and pepper. Add remaining 1 Tbl. Olive Oil and cook for 5 minutes.
  3. Chop cooked asparagus and add to pan.
  4. Stir in GoVeggie Chive & Garlic Cream Cheese Alternative and continue cooking until melted.

Microwaved Red Potatoes


  • 12 small red potatoes


  1. Pierce red potatoes and cook in microwave for 5 minutes or until tender.
  2. Remove from microwave and slice in half, top with Veggie Topping.

It's All About the Topping


  • 6 Tbl. Parmela Creamery Aged Cheddar


  1. Top each stuffed potato with 1/2 Tbl. of Parmela Creamery Vegan Cheese.
