My mom always had the very best summer salads. I never quite knew her secret until later in life and this one is too good not to share. It is simply a matter of draining the boiled tomatoes and topping them with a mixture of red wine vinegar and sugar. The end result is, quite simply, amazing!



  • 2 lbs. small red potatoes, cut in half and then half again
  • 1/3 cup white sugar
  • 3/4 cup red wine vinegar
  • 1/2 medium onion diced
  • 1/2 medium red onion diced
  • 2 stalks celery finely diced
  • 4 Tbl. dill pickle relish
  • 4 Tbl. Follow Your Heart Vegenaise, or other non-dairy mayonnaise
  • 1/2 tsp. black pepper


  1. Wash potatoes and cut in half, and then half again so you end up with quarters. Place in a pan and cover with salted water. Boil until fork-tender but not too mushy. MAKE SURE TO KEEP THE SKINS ON THE POTATOES!
  2. Stir together sugar and vinegar. After pouring cooked potatoes into a strainer, top with sugar/vinegar mixture and let sit until cool. Lightly rinse off extra sugar.
  3. Pour cooled potatoes into a bowl and add onions, celery, non-dairy mayonnaise, and black pepper. Salt to taste.
  4. Serve immediately or chilled.
