I never quite understood why people ate kumquats but they were staring back at me in the produce section so I decided to tackle trying to create a recipe using them. I am not a huge fan of the taste of them, alone, but mixed together with a few sweeter-variety fruits makes them somewhat irresistible.

Zesty Kumquat Salsa


  • 12 whole kumquat finely chopped
  • 1/4 whole red onion finely chopped
  • 1 tsp salt
  • 1/4 cup cilantro
  • 1 tsp jalapeno finely chopped
  • 1 whole tomato chopped
  • 3/4 cup pineapple chopped
  • 1/2 whole lime juiced
  • 1/2 tsp agave nectar


  1. Mix all ingredients in bowl and let sit at room temperature at least 30 minutes.

Seasoned Tofu


  • 1 block firm tofu
  • 2 Tbl. olive oil
  • 1 Tbl. dried herbs de provence


  1. Drain Tofu, slice into strips and grill or sautee with olive oil and Herbs de Provence.

Trader Joe's Mixed Rice


  • 2 cups rice cooked


  1. Cook rice according to package directions. Plate rice, tofu and top with Zesty Kumquat Salsa
