I have always been a fan of soup but found that mushroom soup can either be too rich or too bland.

By adding spinach to the mix, it not only increases the nutritional content but also adds more flavor to the dish.

This is great, served alone, for dinner or lunch or with a side green salad.


  • 2 Tbl olive oil
  • 1 onion chopped
  • 1 pkg mushrooms sliced
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp black pepper
  • 2 cup fresh spinach fresh
  • 2 Tbl Earth Balance Margarine
  • 4 Tbl flour
  • 4 cup vegetable broth
  • 4 Tbl Tofutti Vegan Sour Cream
  • 1 loaf crostini bread sliced


  1. Saute onions in olive oil for 3 min.
  2. Add mushrooms and seasonings and cook 5 min.
  3. Add spinach and continue cooking for 3 min.
  4. Melt the Earth Balance, whisk in flour and vegetable bullion and mix until smooth.
  5. Add mixture to veggies and cook 20 min.
  6. Top with Crostinis, a dollop of sour cream, and Herbes de Provence.
