I love Chinese cuisine and have been experimenting with using tofu instead of animal products in some traditional dishes. This recipe was inspired by the lettuce wraps from PF Changs but I added my own touch and ingredients that vary from the original. Plus, this dish serves as a main entree rather than an appetizer.

The taste is tangy, a little bit sweet with undertones of spicy goodness.

I am not a huge fan of chocolate but when I saw a picture of these cupcakes on TexanErin’s website, I knew it was something I had to try in a cake and veganize it.

The chocolate cake is based on the original recipe but I decided to put my own spin on it so made some Aquafaba Buttercream and added some chocolate ganache. I also increased the amount of baking powder to use some for the applesauce-eggs and decreased the amount of boiling water.

This is a dessert that you may want to make for a special occasion because it is super rich and takes a few extra steps but the outcome is oh-so-delish!

I saw a recipe this weekend and decided to give it a try but wanted to substitute my own ingredients in place of what the original recipe recommended. I am not a fan of super-sweet foods and these bars deliver just the right amount of sugar to make them yummy but not overpowering.

The next time I make these I think I will experiment with drizzling some melted dark vegan chocolate on top!
