Tofu is amazing! However, not by itself. To me, the stuff straight out of the package is somewhat disgusting. It deserves to be baked, fried, broiled, sauteed and blackened.

I love garlic but when cooking with it there is a fine line between getting it crispy and burning it. Make sure to keep the heat at a medium-high temperature and be sure to keep stirring it when cooking.

I had some fresh basil and cilantro that on hand so I decided to toss it in the rice. The result was YUM!

This is the first of two consecutive posts on bowls. They turned out really well and are extremely satisfying. You can, of course, try different veggies suited to your individual taste.

It is good both hot and cold and keeps in the refrigerator for a few days.

My mom used to make this recipe and I remember smelling the amazing aromas that penetrated the house. It is a quick and easy dinner that is unbelievably satisfying.

You really don’t need anything else alongside, but if you insist, some fresh bread or sliced tomatoes are good choices.

I used arugula (rocket) lettuce but any green of choice would suit…kale, escarole or collard.
