Most people I know have a love/hate relationship with asparagus. I am on the love side of the fence and am amazed with its nutritional benefits.

Touted as one of the world’s healthiest foods, asparagus is a great source of:

  • Vitamin K – helps prevent heart disease and improves blood clotting)
  • Copper – increases the body’s absorption of Iron
  • Folate/Vitamin B9 – encourages cell and tissue growth
  • Selenium – good for heart health, blood flow and reduces free radical oxidative stress
  • Vitamin B2 – aids body in producing red blood cells and converting food into energy
  • Vitamin C – an antioxidant that also helps the body form and maintain healthy skin and bones
  • Vitamin E – helps reduce damage from free radicals

Asparagus also is contains Fiber, Manganese, Phosphorus, Niacin, Potassium, Choline, Zinc, Iron, Protein, Vitamin A & B6, and Pantothenic Acid, which helps the body convert food into energy.

I am not a huge fan of chocolate but when I saw a picture of these cupcakes on TexanErin’s website, I knew it was something I had to try in a cake and veganize it.

The chocolate cake is based on the original recipe but I decided to put my own spin on it so made some Aquafaba Buttercream and added some chocolate ganache. I also increased the amount of baking powder to use some for the applesauce-eggs and decreased the amount of boiling water.

This is a dessert that you may want to make for a special occasion because it is super rich and takes a few extra steps but the outcome is oh-so-delish!

I love oatmeal! Oats are a rich source of fiber and also contain calcium and potassium which can help reduce blood pressure. However, Oatmeal Raisin Cookies should not be considered a “health food” but they offer a much better nutritional profile than a chocolate chip cookie or piece of banana cream pie.

As with everything, try to limit your serving size and be conscious of the sugar content. I make a big batch, keep out a few cookies and freeze the rest. They are easy to defrost and make a great accompaniment for a cup of afternoon tea (since the origin of the Oatmeal cookie dates back to Great Britain), or to satisfy a late night sweet tooth!
