It is a cold day here in Southern California, a brisk 60 degrees! Time for soup. But, to be perfectly honest, every day is a great day for soup.

This comes together rather quickly 1 hour, tops, including cook time. Use your imagination for whatever you want to use as toppings….vegan sour cream, avocado, tortilla strips, fresh cilantro, or all of the above!

An extra added taste is a squeeze of fresh lime juice. YUM!

My neighbor surprised me with some delicious, organic homegrown tomatoes and green peppers. They, however, were super-ripe and needed to be either turned into a sauce or cooked in a casserole. I also had some Soyrizo on hand and decided to make some Mexican Lasagna. The Enchilada Sauce was adapted from Cookie and Cate!

Holy Guacamole, you may never want to eat regular guacamole again! This super-creamy sensation is great on tacos, burritos, chips, toast and more. Heck, I would even eat it on my oatmeal! LOL

Just a few ingredients and ready in a flash. Great for last-minute appetizers that will definitely impress your guests!
