Cashew Cheese is amazing! I would, however recommend using a super powerful blender because my food processor left a few small lumps of cashews. The taste was still amazing but it was like eating chunky peanut butter rather than smooth.

Go ahead and experiment with various ingredients to flavor your cheese.

Cashew Cheese Base

Ingredients

  • 2 cup cashews soaked
  • 1/2 cup water
  • 1/2 cup nutritional yeast
  • 1 tsp garlic crushed
  • 4 Tbl lemon juiced
  • 4 Tbl white wine vinegar
  • 4 tsp salt
  • 1/2 tsp salt
  • 3 tsp dijon mustard

Directions

  1. Soak 2 cups raw, unsalted cashews in water for at least 2 hours.
  2. Drain soaked cashews and combine in food processor with rest of ingredients. Combine until smooth.
  3. Divide the Cashew Cheese into three bowls.

Roasted Pepper Cheese

Ingredients

  • 1/2 cup roasted red pepper
  • 1/4 cup roasted red pepper

Directions

  1. Mix 1/2 cup Roasted Red Peppers into the food processor along with the first bowl of the cashew cheese base. Blend well.
  2. Transfer to back to bowl and garnish with Roasted Red Peppers.

Herbed Cheese

Ingredients

  • 2 Tbl fresh chives
  • 1 Tbl onion powder

Directions

  1. Mix 2 Tbl. dried or fresh chives and 1 Tbl of onion powder into the food processor along with the second bowl of the cashew cheese base. Blend well.
  2. Transfer to back to bowl and garnish with chopped chives.

Black Olive Cheese

Ingredients

  • 1 can black olives drained and rinsed

Directions

  1. Drain and rinse the can black olives.
  2. Mix the black olives into the food processor along with the last bowl of the cashew cheese base. Blend well.
  3. Transfer to back to bowl and garnish with black olive slices.
