I love Chinese cuisine and have been experimenting with using tofu instead of animal products in some traditional dishes. This recipe was inspired by the lettuce wraps from PF Changs but I added my own touch and ingredients that vary from the original. Plus, this dish serves as a main entree rather than an appetizer.

The taste is tangy, a little bit sweet with undertones of spicy goodness.

Sweet and Spicy Topping

Ingredients

  • 1/2 cup sugar
  • 3/4 cup water
  • 4 Tbl. low sodium tamari
  • 4 Tbl. white wine vinegar
  • 1 Tbl. lemon juice
  • 1/2 tsp. sesame seed oil
  • 1 Tbl. dijon mustard
  • 2 Tbl. ketchup
  • 2 tsp. Sambel Oleek

Directions

  1. In a medium bowl combine sugar, water, soy sauce, vinegar, ketchup, lemon juice, oil. Whisk in Dijon mustard and Sambal Oleek. Set aside

Mushrooms With Hearts of Palm

Ingredients

  • 1 Tbl. olive oil
  • 8 oz. mushrooms chopped
  • 8 oz. hearts of palm chopped
  • 1/2 cup onion chopped
  • 1 tsp. garlic minced

Directions

  1. In a separate saute pan, heat oil and add mushrooms, onions and garlic, cooking for 4 to 5 minutes over medium-high heat and stirring often.
  2. Add diced hearts of palm and continue cooking for 4 to 5 minutes.
  3. Combine all ingredients into pan with tofu and continue cooking over low for 2 minutes and then add finishing sauce.

Pan Fried Tofu

Ingredients

  • 2 Tbl. olive oil
  • 2 pkg. firm tofu drained and chopped

Directions

  1. Heat oil in large saute pan.
  2. Add drained, diced tofu to pan and cook over medium-high heat until browned.

Finishing Sauce

Ingredients

  • 4 Tbl. low sodium tamari
  • 4 Tbl. dark brown sugar
  • 1 tsp. white wine vinegar

Directions

  1. In a small bowl, combine soy sauce, brown sugar and vinegar and whisk until smooth.
  2. Pour over tofu/veggie mixture and continue cooking over medium-low heat for 5 minutes.

Romaine & Rice Base

Ingredients

  • 24 Leaves romaine lettuce
  • 4 cups white rice cooked

Directions

  1. Line each plate with 3 Romaine Lettuce Leaves.
  2. Top with 1/2 cup cooked rice, tofu mix and 2 Tbl. Finishing Sauce
