I love eggplant parmesan and decided to substitute zucchini, not deep fry it, and cut down on bread crumbs to make it healthier. This dish is delicious and zucchini is also nutritious. A medium zucchini only has around 30 calories and contains protein, fiber, Vitamin B6, Folate, Potassium, Riboflavin, Manganese, Copper, and Iron. Plus it boasts almost 40% of the recommended daily value of Vitamin C.

It comes together easily and in a relatively short amount of time. Perfect for hectic back-to-school weeknights. I recommend serving it with a side salad or,  for a heartier meal, alongside a simple pasta or couscous.

Would you consider me crazy if I told you I like this soup hot or cold? It is seriously that good! It makes a great dinner by itself or served with a side salad.

Beans contain a whopping 17 grams of protein along with less than 1 gram of fat and 44 grams of fiber. They are, quite simply, a wonderful source of nutrition, and they taste great too!

According to my research, white chili started in the western United States  Texans claim that the first simmering pot was born in the Lone Star State. And, if you are from the South, they also insist they were the first to serve this yummy dish. Either way, this vegan version is super delicious and nutritious!

Feel free to add some additional seasonings to this recipe but make sure you don’t overpower the cumin because that adds so much to the smoky taste that will have your taste buds singing!

MUSHROOMS! They are not plants but specifically members of the fungi family and are more closely related to animals and humans with their unique composition. Mushrooms get their nutrition from organic matter, unlike plants that produce their food through photosynthesis. And, like humans, they need food, water, and oxygen to survive. Another fun note is that fungi are the most significant forms of life on earth that can grow and expand for miles, underground, in search of food.

There are so many varieties available and, I recommend using a combination of at least 3 different types of mushrooms with this recipe.

Mushrooms also provide antioxidants and nutrients that may contribute to heart health and protect the body from certain cancers.

These mushrooms are excellent served with freshly made garlic toasts but are also great stuffed into a pita pocket and topped with a dash of vegan parmesan or tzatziki.
