This New York Times recipe popped into my inbox a few days ago and I was excited to give it a try. I went to pick up some dumpling wrappers at Whole Foods and unfortunately, they only had eggroll wrappers.  Being a fan of Bob Ross, I subscribe to the saying that  “We don’t make mistakes, we just have happy little accidents!”

I followed the recipe for the “dumplings” but was not happy with the filling. It tasted bland and spicey. So, I decided to make some adjustments and the outcome was spectacular.

I’ve included a step-by-step picture tutorial on how to wrap the pockets. First, cut the squares into two triangles. Add a small amount of filling and fold over like shown in the pictures. Please use water and lightly coat the edges to make sure every side is sealed.

 

 

 

 

 

 

 

 

 

 

 

This does take a bit of time but makes enough to pop in the freezer for a quick, weeknight meal alongside a salad.

My son asked for a “variety” of cupcakes for his birthday this year. I knew chocolate ones were on his list but decided to also make something a little less chocolatey!

These lemon raspberry ones were so light and refreshing. I also used half of the same batter and made some peanut butter chocolate cupcakes.

To make both the lemon raspberry and peanut butter cupcakes, divide the batter in half. For the peanut butter eliminate lemon juice in batter and add 1/2 cup of peanut butter to half of the frosting recipe and eliminate raspberry preserves, lemon juice, and lemon rind. Top with melted dark or semi-sweet chocolate and sprinkle with nuts or graham cracker crumbs.

I absolutely LOVE peanut butter! If it came down to selecting my 3 favorite foods, they would be:

  1. Peanut Butter
  2. Broccoli
  3. French Fries

Even though I am more of a savory girl, these peanut butter cookies offer just the right amount of sweetness!

Drizzling the chocolate topping is definitely optional, but as my grandson insists, everything is better with chocolate!
