There are those days when a warm dish of something slightly decedent is just what is needed. Today was one of those days. I logged in 12 miles yesterday so thought I deserved a little “treat”.
This comes together super easy and is great topped with or alongside leafy greens or any other colorful vegetable.
It is very satisfying so try starting with a half of portion.

I’m from New York and did not have the tradition of eating black eyed peas on New Year’s Day. My husband, however, is from the South and he loves him some for good luck on January 1st.
I totally forgot to pick some up at the store earlier in the week and was shocked that the shelves in 2 different stores were wiped clean. My husband went to a 3rd store and found 1 can. I was just about to add them to the recipe below when I realized they were “Southern Style” which translates to lots of seasonings and bacon fat! YUCK!
I decided to use Cannellini Beans instead and guess what…these burgers turned out fantastic!

Pasta! A staple in my household. I always have at least 6 packages on hand, both regular and gluten-free.
This Italian version of a traditionally French dish is loosely-based on a dinner my mom used to make when I was growing up.
You can also eliminate the Kite Hill Ricotta which makes it a little less decadent.
