Portobello mushrooms are versatile and healthy! They provide 11% of the daily fiber requirement and contain approximately 30 calories per serving.

Mushrooms convert sunlight into vitamin D, which helps the body absorb calcium and phosphorus, two essential nutrients for maintaining bone strength and health.

Portobellos also contain antioxidants, vitamin B, potassium, and selenium.

They are a plant-based delicacy that, when cooked correctly, mimick steak.

This recipe uses 4 to 8 mushroom caps. There is enough filling for all 8 mushrooms or 4 mushrooms with a side of the Spinach Artichoke filling.

These filled mushrooms take a few extra steps, however, the result is deliciousness on a plate.

I recently relocated from the west coast to middle Tennessee, and the southerners are serious about their peaches! And, with good reason, they are scrumptious.

After coming home from a farmer’s stand today, I decided to take a little bit of my bounty and make some mini muffins. You know, the bite-size variety you can pop in your mouth by the dozen!

These can also be made into regular-sized muffins but there is something special about these tiny sensations!

My son asked for a “variety” of cupcakes for his birthday this year. I knew chocolate ones were on his list but decided to also make something a little less chocolatey!

These lemon raspberry ones were so light and refreshing. I also used half of the same batter and made some peanut butter chocolate cupcakes.

To make both the lemon raspberry and peanut butter cupcakes, divide the batter in half. For the peanut butter eliminate lemon juice in batter and add 1/2 cup of peanut butter to half of the frosting recipe and eliminate raspberry preserves, lemon juice, and lemon rind. Top with melted dark or semi-sweet chocolate and sprinkle with nuts or graham cracker crumbs.
