Summer brings long days, beautiful sunshine, replenishing rain, and amazingly delicious vegetables. I used dried parsley and oregano but you can substitute fresh if you have some on hand.
This dish really is great as a main with a side salad for a delicious and fulfilling dinner or, if you are super hungry, you can always mix it with pasta, rice, or as a bruschetta.
The Parmesan shreds are optional, but I highly recommend using them!

This is a great casserole for holidays and special occasions. However, even in the midst of 90+ degree days, broccoli cheese casserole is a good choice for dinner!
I have never come across a vegan mushroom soup that I like but making it from scratch is really quite easy.
It is a really rich and dreamy-creamy dish that is best served alone or with a side salad. However, if you are looking for something even more substantial, you can also enjoy it on rice or potatoes.

There are literally hundreds of spaghetti squash recipes but mostly every single one of them includes tomatoes and/or red sauce. I wanted to do something original, delicious, and creamy. This herb-infused creation takes a few fairly bland vegetables – spaghetti squash, cauliflower, and mushrooms – and elevates them into a main or side dish sensation.
As always, feel free to use whatever herbs you have on hand, or simply follow the recipe exactly. I will note, however, that it may be difficult to find German Thyme but substituting more lemon thyme or parsley will also work great.
