This looks like a super hard and involved dish to prepare but trust me, it is simple…especially if you use a store-bought pie crust.

You can adjust the veggies to taste but I would recommend trying it with the ingredients listed in the recipe, for the first time, and then feel free to adjust it to your taste when you make it again.

The key is to make sure you add HEAPING tablespoons of flour, otherwise, the quiche will be too runny. A note of advice, let the quiche sit on the counter for about 10-15 minutes before slicing it. Leftovers can stay in the refrigerator for up to 5 days.

My neighbor surprised me with some delicious, organic homegrown tomatoes and green peppers. They, however, were super-ripe and needed to be either turned into a sauce or cooked in a casserole. I also had some Soyrizo on hand and decided to make some Mexican Lasagna. The Enchilada Sauce was adapted from Cookie and Cate!

I like to try and invent a variety of veggie burgers and these seriously are amazing. Most veggie burgers have cooked peas and corn, which are two of my least favorite veggies. I prefer broccoli and sweet potato so that’s what I put in this recipe.

You can always bake them in the oven but I prefer the crispy texture that comes from pan-frying or grilling. If you want to bake, I would recommend coating the burgers in cornmeal first.

I used Cajun Seasoning for a little bit of heat but you can substitute hot sauce or eliminate it altogether. These burgers are gluten-free but if you want them to hold together better, add 1/2 cup of bread crumbs.

Burgers can be made ahead and frozen.
