My husband is from the south and when it comes to biscuits he is an expert. I have tried replicating his grandmother’s famous recipe but it never properly veganized.

I decided to give it another try with some different ingredients. These received the “Jack Seal of Approval”.

Super simple to make but the key is to make sure the Earth Balance is COLD when mixing into the flour and other dry ingredients.

Until this recipe I had never cooked with pearl onions. They are a bit of effort to remove the skins but can come off rather quickly with this method.

  • Slice off ends and place pearl onions in boiling or hot water and then cool. The skins should easily peel off.

My friend had some leftover fresh herbs that I used to season the onions. I just used the entire stalk of herb and then removed before serving. If you prefer, you can chop the herbs before cooking and leave in the dish.

Eggplant is an amazingly versatile veggie and these stacks make quite an impression when plated.

You can make this recipe gluten free by substituting Arrowroot Powder or a gluten free flour in the sauce.

This dish works well alone or on a bed of pasta or greens.
