Zucchini is the star in this casserole with summer squash, potatoes, onions, and tomatoes in supporting roles. If you are not a fan of tomatoes, it is ok to omit them from the recipe. Also, if you do not particularly like summer squash, just replace it with more zucchini.

This recipe feeds 4-6 as a side dish and 2-4 as a main dish. I like to have it alongside a fresh green salad and some crunchy bread. It also makes a great filling for tortilla shells!

It also stores well in refrigerator, after baking, for about 3 days.

Ingredients

  • 2 medium zucchini, (about 8" long, thinly sliced)
  • 1 medium yellow squash thinly sliced
  • 6 small potatoes thinly sliced
  • 1/2 medium onion thinly sliced
  • 1 large tomato thinly sliced
  • 3 Tbl. olive oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. Oregano
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder

Directions

  1. Spray a glass baking dish.
  2. Arrange zucchini, yellow squash, potatoes, onions, and tomatoes in layers.
  3. Drizzle with olive oil and then seasonings.
  4. Cover with parchment paper and then aluminum foil and bake in a 350-degree oven for 35-45 minutes, or until fork-tender.
