Regulars to this site have probably noted my love of broccoli and pasta! However, when the two are melded together it is simply heavenly.

This recipe comes together relatively quickly but it uses a few pans so there is a bit more cleanup. (It’s worth it!)

Ready to Mash Broccoli

Ingredients

  • 4 cups broccoli florets steamed
  • 1/2 tsp. salt

Directions

  1. Cook Broccoli in 4 cups of salted water until fork-tender. Drain and set aside.

Seasoned Broccoli & Sauce

Ingredients

  • 2 Tbl. avocado oil or oil of choice
  • 1/2 large red onion chopped
  • 1/2 large red pepper diced (you can also substitute a green pepper)
  • 1/4 cup cilantro chopped
  • 4 large basil leaves chopped
  • 1/2 tsp. salt
  • 2 cups broccoli florets
  • 1 large lime juiced

Directions

  1. Heat Avocado Oil and add Red Onion and Red Pepper and saute over medium heat for 2 minutes.
  2. Stir in Cilantro, Basil and salt and cook just until slightly wilted, about 30 seconds.
  3. Stir in Broccoli pieces and saute 8 minutes.
  4. Squeeze lime juice.

Simply Couscous

Ingredients

  • 1 1/3 cups Dry Couscous, prepared according to package directions
  • 1 tsp. Reduced Sodium Better Than Bullion

Directions

  1. Cook couscous, according to package directions (I used Trader Joe's brand) along with adding 1 tsp. Reduced Sodium Better Than Bouillon to cooking water.

Finishing the Dish

Ingredients

Directions

  1. Mash steamed broccoli and stir into cooked couscous.
  2. Stir in Seasoned Sauce and serve.
