This recipe is loosely based on my sister-in-laws mom’s recipe for Hummingbird cake.

I couldn’t remember the exact ingredients in the original (although I am sure eggs and butter were on the list) so I just experimented and came up with this yummy, vegan delights.

Growing up my mom always made pignoli cookies during the holidays. They are so delicious and are perfect during the afternoon with a cup of tea or fancy enough to be served for dessert.

I must warn you, however, both the pine nuts and almond paste are a bit pricey. WalMart sells the same almond paste as high-end grocery stores but a few dollars less expensive.

These cookies can be stored, at room temperature, in a tightly sealed container for several days.

One of the many things I like best about Oatmeal Raisin cookies is that they are not super sweet. The raisins offer just the right amount of flavor to keep them somewhat savory and not overpowering.

You can substitute a mixture of applesauce and baking powder for the eggs in case you do not have any Follow Your Heart VeganEggs.
