The word Eurasian means a combination of European, or European American, and Asian cultures. When I made this recipe I was trying to create crispy-crunchy Brussels sprouts that had an emphasis on Italian flavors. My decision to use Pad Thai rice noodles seemed like just the perfect and unexpected accompaniment to the dish. Additionally, the rice noodles are gluten-free so, in my mind, a winner!
You can serve the Brussels Sprouts on their own as a side dish or mixed with traditional pasta but I would strongly suggest you first try using rice noodles.
I went light on the red pepper flakes, which can be adjusted to individual taste. I used the CHICKENLESS Better than Bouillon however the vegetable variety would also work great.
This dish also works great for leftovers but I recommend adding a splash of water and a drizzle of olive oil before reheating.

Searching for Italy with Stanley Tucci is such a delightful show! I have been trying to make some of the amazing foods, without recipes!
I truly think I nailed it with my version of Capellini with Zucchini sauce. SOOOOOOO Yummy.

Italian Wedding Soup, or Chicken Soup with Escarole, is a staple for all holidays celebrated in an Italian household. Whether it is Christmas dinner or any day that ended in the letter “y”, chicken soup with escarole was practically always on the menu.
I have not had this traditional soup for 15+ years and I am happy to share with you, my vegan recipe. I decided to call it Chicken-less Soup for the Souls because of the chickens saved in making this variety.
There are numerous options to use in place of the chicken, including Edward & Sons Not-Chick’n Bouillon Cubes or Better Than Bouillon No Chicken Base. I also recommend the new Vegan Chicken-Less Seasoning Salt from Trader Joe’s. It is a delicious blend of sea salt, onion powder, Spices, Turmeric and Garlic Powder. I use it to season the tofu after frying it and before adding to the soup.
