Mexican Food. Si Si Si!

I did not grow up having Mexican food, there wasn’t much of it to be found decades ago in a small Upstate NY town. But, since I dipped my first tortilla chip into a bowl of fresh guacamole, I was hooked.

I continue to try and create Mexican classics,  veganized. This one happens to be one of my husband’s favorite dishes and I hope that you, too,….ENJOY!

Supreme Taco Filling

Ingredients

  • 1 large eggplant
  • 2 Tbl sea salt finely ground
  • 1 pkg firm tofu cubed
  • 2 avocados sliced
  • 2 cup arugula
  • 3 Tbl Tofutti Vegan Sour Cream

Directions

  1. In a large bowl dissolve 2 Tbl. Salt in 1 cup warm water. Then add 6 cups of cool water.
  2. Immerse eggplant slices and let sit 30 minutes.
  3. Rinse and pat the eggplant slices dry. Brush each with olive oil and sprinkle with salt and grill oil side down on medium heat for 5 min.
  4. Coat top side with oil and flip over. Continue cooking 3 to 5 min.
  5. Coat a corn tortilla with a light layer of sour cream. Top with one slice of grilled eggplant, avocado, arugula, tofu, and salsa.
  6. Also your favorite nut cheddar cheese if desired.

Quick Salsa

Ingredients

  • 1/2 red onion diced
  • 4 cloves garlic
  • 1/2 cup fresh cilantro
  • 1 tsp salt
  • 1 lime
  • 2 14.5oz tomatoes chopped

Directions

  1. In a food processor combine onion, garlic, Cilantro leaves, and salt.
  2. Slightly drain the can(s) of diced tomatoes and add to food processor and combine.
  3. Add lime juice to taste.
