I love kale but I also know a lot of people that are not huge fans of this super-good-for-you food. When I created this salad, that is filling enough for an entire meal, it helped turn kale-no-bees into yes please!

I use quinoa and Trader Joe’s Rice Medley which makes it hardy and nutritious but you can substitute any other grain of choice including Israeli couscous.

Ingredients

  • 4 Tbl Earth Balance Margarine
  • 1 onion Chopped
  • 8 oz. mushrooms Chopped
  • 1 anaheim pepper seeds removed
  • 1 tsp. salt
  • 1 cup quinoa cooked
  • 1 cup Trader Joe's Rice Medly
  • 3 whole tomatoes chopped
  • 1 head kale chopped into bite sized pieces
  • 1 Tbl. low sodium tamari
  • 1 Tbl. dried oregano
  • 1/2 cup pine nuts
  • 1/2 cup cranberries

Directions

  1. Melt Earth Balance in saute pan. Add, Onion, mushrooms, Anaheim pepper and salt. Cook until crispy-tender.
  2. Add cooked Quinoa, Mixed Rice and coat. Stir in chopped tomatoes, kale.
  3. Top with Tamari and Oregano. Toss just until wilted.
  4. Remove from heat. Place equal amounts in serving bowls and top with pine nuts and cranberries.
