I recently relocated from the west coast to middle Tennessee, and the southerners are serious about their peaches! And, with good reason, they are scrumptious.

After coming home from a farmer’s stand today, I decided to take a little bit of my bounty and make some mini muffins. You know, the bite-size variety you can pop in your mouth by the dozen!

These can also be made into regular-sized muffins but there is something special about these tiny sensations!

Ingredients

  • 1/2 cup applesauce
  • 1 tsp. baking powder
  • 3 cups flour
  • 1 1/2 cups sugar
  • 4 tsp. baking powder
  • 2 tsp. cinnamon powder
  • 1 1/2 tsp. ginger powder,
  • 1 tsp. salt
  • 1 cup non-dairy milk I used Silk Next
  • 2/3 cup oil vegetable is best
  • 3 tsp. vanilla extract
  • 1 tsp. almond extract
  • 2 large peaches diced
  • 1 cup Blueberries,

Directions

  1. In a small bowl, mix together applesauce and baking powder. Set aside for a few minutes to foam.
  2. Whisk together dry ingredients in a large bowl.
  3. Combine non-dairy milk, oil, vanilla, and almond extracts and add, along with the applesauce mixture to dry ingredients.
  4. Gently fold in peaches and blueberries.
  5. Mix together the topping mixture.
  6. Line mini baking sheets with cupcake holders and fill each with batter. Top each with about 1/4 tsp. of topping mixture.
  7. Bake in 350-degree oven for 15 minutes.

  • 2 Tbl. sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
