YUM! These are so good and are gluten-free too! However, if you really insist on keeping that gluten, you can substitute traditional flour for the garbanzo flour…either way they taste so good.

This time I used toasted black sesame seeds but the white variety works just as well. These poppable sensations are a great source of protein with 15 grams per serving.

For a topping, I mixed together 3/4 cup vegan sour cream, 1/2 cup vegan, 1 1/2 tablespoons of crushed garlic, 1 tablespoon chopped herb of choice (basil, oregano, dill, etc.) and salt.

Ingredients

  • 3 large zucchini, grated and mixed with 1 tsp. salt
  • 1 1/2 cups garbanzo flour
  • 1 tsp. salt I use Himalayan Pink
  • 2 tsp. onion powder
  • 1 Tbl. nutritional yeast
  • 1 tsp. coriander
  • 1/2 tsp. black pepper
  • 1 large tomato seeded and diced into small bite-sized pieces
  • 1 medium carrot shredded and finely chopped
  • 1 cup toasted sesame seeds, black or white

Directions

  1. Place shredded zucchini in a large bowl and mix with 1 tsp. salt. Let sit for 15 to 20 minutes. Squeeze excess water out with hands.
  2. In a large bowl mix together Garbanzo Flour, Salt, Onion Powder, Nutritional Yeast, Coriander and Black Pepper.
  3. Fold in zucchini, tomato, carrot and garbanzo flour mixture.
  4. Roll into small balls (about 2 Tbl.) and then roll into sesame seeds. Flatten into discs.
  5. Fry in choice of a high-heat oil about 4 - 5 minutes per side.
  6. Serve with fresh greens and breadsticks.
  7. Optional: Top with dressing, the recipe in intro paragraph above.
