I have always loved split pea soup and this version adds a few more spices than the normal, somewhat bland, version.

Try serving it with a generous portion of crusty french bread or alongside a kale salad. Green + Green helps keep you healthy!

If you want an even hardier soup, try adding a large, diced potato with the split peas or 1/4 cup pearled barley during the last 25 to 35 minutes of cooking. (You may need to add some additional veggie broth if the soup is too thick.)

Ingredients

  • 2 Tbl. olive oil
  • 1 Tbl. garlic crushed
  • 1 medium onion diced
  • 1 cup carrots diced
  • 6 cups water
  • 1 1/2 Tbl. Vegetable Better than Bouillon
  • 16 oz. split peas dried
  • 1 large bay leaf dried
  • 5 large basil leaves fresh
  • 10 large cilantro leaves, fresh
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Directions

  1. Saute Garlic, Onion and Carrots in Olive oil for 4 minutes.
  2. Stir in remaining ingredients and simmer, slightly covered for 60 to 75 minutes or until desired consistency.
  3. Remove from heat and use an immersion blender to mix.
  4. OPTIONAL: Top with a dollop of Vegan Sour Cream and Rye Bread Croutons
