It’s Fall! Horray. My birthday and lots and lots of pumpkin. I went into Trader Joe’s a few days ago and they have dozens of pumpkin food items, even dog treats!

There are a gazillion pumpkin cake recipes out there but I recommend you try this one. You can top it with your choice of Vegan Whipped Cream, Powdered Sugar, Vegan Cream Cheese Frosting, or all by itself.

I used half-sized bundt pans and if you don’t have them you can use 2 loaf pans or a 9 x 13″ baking dish.

Ingredients

  • 1 cup applesauce
  • 1 tsp. baking powder
  • 2 cups sugar
  • 1 1/4 cup vegetable oil Organic Non-GMO Canola Oil preferred
  • 1 1/2 tsp. vanilla extract
  • 15 oz. pumpkin Organic, canned
  • 3 cups flour
  • 3 tsp. baking powder
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1/2 tsp. ginger

Directions

  1. In a small bowl, mix together applesauce and baking powder. Let sit 5 minutes.
  2. Meanwhile, in a large bowl mix together sugar and vegetable oil for about 2 minutes.
  3. Add vanilla extract and pumpkin until combined.
  4. Mix in applesauce "eggs" from applesauce and baking powder mixture, until combined.
  5. In another bowl, stir together dry ingredients and add to the wet mix, until blended.
  6. Grease and flour 2 mini bundt pans (or 2 loaf pans).
  7. Divide mixture in pans.
  8. Bake at 350 degrees for 45 minutes or until toothpick comes out clean.
  9. Cool completely and top with desired topping.
