My husband was getting ready to go out of town and I needed to whip up a quick dinner. I had some sliced mushrooms in the refrigerator and decided to make them the star attraction. I love just about anything Mexican and this dish is not too spicy. (Although, feel free to add some kick if that is your style!)

You can experiment with adding more ingredients, like black beans, corn or even Soyrizo. The possibilities are as big as your imagination.

ENJOY!

Ingredients

  • 1 Tbl. olive oil
  • 3 Tbl. Earth Balance stick-melted
  • 12 oz. mushrooms sliced
  • 1 tsp. garlic powder
  • 1 tsp. cilantro Dried
  • 4 cups rice cooked
  • 14.5 oz. Chopped Tomatoes, slightly drained
  • 1 cup Spinach Leaves, Fresh
  • 1 cup Vegan Gourmet Shreds, Cheddar Flavor

Directions

  1. In a large saute pan heat oil and melt Earth Balance. Add mushrooms and cook, over medium high heat for abot 5 minutes or until slightly browned. During last minute add Garlic Powder and Cilantro.
  2. Grease a 9 x 14" casserole dish and line with cooked rice.
  3. Top with Cooked Mushrooms (including juices from pan), Chopped Tomatoes, Spinach Leaves and Vegan Gourmet Shreds
  4. Cover with Aluminum Foil and Cook for 20 minutes in a 425 degree oven, or until cheese has melted.
