It is raining again in Southern California. This has been one of the wettest winters on record but no one is complaining! We need the moisture, albeit maybe not this much, to help with the years-long drought.

I ran to the Whole Foods before the torrential downpours started and gathered up some ingredients for some Chili.

This recipe only takes about 10 minutes to prepare and 90 minutes to cook.

Serve it with a handful of tortilla chips or even some oven-baked polenta.

ENJOY!

Ingredients

  • 2 Tbl. olive oil
  • 1 large onion chopped
  • 1 stalk celery chopped
  • 1 large carrot diced
  • 1 tsp. garlic crushed
  • 13 oz. Field Roast Mexican Chipoltle Sausage
  • 14.5 oz. black beans with juice
  • 14.5 oz. garbanzo beans with juice
  • 14.5 oz. cannellini beans with juice
  • 28 oz. Diced Tomatoes, with juice
  • 1 tsp. salt
  • 2 whole bay leaves
  • 1/2 tsp. cocoa powder

Directions

  1. Heat Oil in Large Saucepan.
  2. Add Onion, Celery, Carrot and Garlic and simmer for 3 minutes.
  3. Stir in remaining ingredients and simmer, slightly covered, for 90 minutes.
  4. Serve alone or with tortilla chips, baked polenta or cornbread. I added a spoon of vegan sour cream and a few slices of avocado too!
