Soba Noodles with Portobello and Asparagus

We lived in Tokyo for 3 years and that is where we fell in love with soba noodles. The great thing about them is they are gluten free which means they will not leave you feeling over-stuffed.

This recipe can be also used by substituting rice for the soba noodles but I would recommend sticking with the noodles because they complement rather than overpower the veggies.

Ingredients

  • 1 Tbl olive oil
  • 10 spears asparagus chopped into 2" segments
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 Tbl tamari
  • 6 oz soba noodles
  • 1 Tbl vegetable bouillon
  • 1 Tbl avocado oil
  • 2 Tbl garlic crushed
  • 2 whole portobello mushrooms large

Directions

  1. In a large bowl or zip lock bag, toss asparagus with olive oil, garlic and onion powder and Tamari.
  2. Cook on foil lined baking sheet in 400° oven 15 to 20 min.
  3. In saute pan heat avocado oil and add crushed Garlic, add Portobello Mushrooms and cook 8 min.
