I love soup. One of the reasons fall and winter are great times of year is that soup is almost always right! Even in Orange County, CA! I love pea and bean soups and have another recipe for Split Pea Soup on the blog but in this version, I use Trader Joe’s 10 Minute Barley in place of the potatoes and leave out some of the seasonings.

When making this soup, it is always about desired consistency. I used 8 cups of water/stock but you can always opt for more or less. It is all up to you and your personal preferences. I recommend starting out with 6 cups and adding more, a little at a time.

This soup can also be made in the crock pot and the dried, split peas can be soaked overnight to cut down on cooking time.

Ingredients

  • 2 Tbl. olive oil
  • 1 large onion chopped
  • 2 large carrots chopped
  • 1/2 tsp. black pepper
  • 16 oz. organic split peas, rinsed and sorted
  • 6 to 8 cups water heated
  • 2 Tbl. Low Sodium Better Than Bullion Vegetable Flavor
  • 1/2 cup Trader Joe's 10-minute barley
  • 1/8 tsp. Wrights Liquid Smoke

Directions

  1. In a stockpot heat oil.
  2. Add onion and cook for 2 minutes over medium-high heat.
  3. Stir in chopped carrots and continue cooking for 4 to 5 minutes.
  4. Add black pepper and, if desired, some salt. NOTE: Because of the Better Than Bullion you may not need the salt.
  5. Mix in split peas, hot water and bullion.
  6. Turn heat down to medium-low and cover pan.
  7. Simmer for 1 1/2 to 2 hours, stirring occasionally. NOTE: If the peas are sticking to the bottom of the pan, the heat is too high.
  8. Add more water if needed.
  9. Pour in Trader Joe's 10 Minute Barley and continue cooking, covered
  10. During last 15 minutes of cooking, stir in Wright's Liquid Smoke.
